Counter warm-up and total peeling volume
First Cut (100.0%), Warmed Up (97.3%), A Thousand Peels (67.0%), Ten Thousand (55.1%), and The Quota (48.4%)
These five visible milestones measure raw potato volume from the opening knife stroke on shift one through clearing every last potato on the outdoor mountain. Both hand-peeled tubers at the counter and machine-peeled loads in the bay count toward A Thousand Peels, Ten Thousand, and The Quota.
